Ok, ok…I know that’s a rooster & not a chicken. Grant me just the tiniest bit of artistic license if you please! Anywho, here is a gr8, delicious & easy recipe for chicken enchilada casserole. It’s an easy recipe that will quickly become a favorite.
This is a quick easy recipe that features low fat ingredients. Enjoy!
Prep: 10min Makes: 10 servings Cook: 10min Bake: 28min
- 3 cups shredded, cooked chicken
- 1 (1.25 oz) taco seasoning packet
- 2 cups salsa verde (Pace has best IMHO)
- 9 Fajita size wheat tortillas
- 1 (15.5 oz) can vegetarian refried beans, warmed in microwave
- 8 oz fat free sour cream
- 3 cups Kraft fat free shredded cheddar cheese
- Watkins Cooking Spray
- Heat oven to 350 degrees. Mix (cooked) chicken, taco seasoning, 1/2 cup water & salsa verde in a skillet. Simmer on medium heat for 10 min.
- Coat 13 X 9 X 2-inch pan w/ Watkins cooking spray. Cover bottom of pan with 3 wheat tortillas, overlapping. Pour half of the chicken mixture on the tortillas. Cover with 3 more tortillas. Spread with warmed beans & the sour cream.
- Sprinkle half the cheese over the beans & sour cream, and cover with the remaining 3 tortillas. Top with remaining chicken mixture, followed by remaining cheese. Bake at 350 degrees for 28 minutes, until bubbly.
